Want to pump up your mashed potatoes with a little more vitamins? When you're peeling and dicing and getting them ready to boil, throw in a sweet potato (peeled and diced, of course). It does turn your finished mashed potatoes a wonderful orange color ( plus at our house) but we find that the finished taste changes very little. Perhaps just a bit sweeter.
Sneaking in more vegetables whenever I can...works for me!

Yum! I love sweet potatoes but never thought to do this!
You know, that's smart. WE just skip the middle man and make mashed sweet potatoes!
